There are three documents you will need to "prove" you have health insurance for your visa colletion.
A copy of the insurance contract in your name
Proof that you have paid for the insurance
The health insurance card

When you buy your insurance online the insurance company systems autogenerate pdfs and automatically email you the pdfs.
All you need to do is print off the documents and hand then to the embassy staff when they ask for them.

A copy of the email Dresden are currently sending for approved visas

(2) an original copy of the health insurance contract. Since there is an exception based on a binding bilateral treaty applicable to the U.S. national citizens, it is necessary to provide us with the original copy of the health insurance contract, which covers the period between getting the visa and participating in the Czech public health insurance (i.e. the insurance contract shall be valid for at least two months from the date of the visa collection).
The contract must be in Czech and signed by the insurance company.
PLEASE NOTE, that the minimum insurance amount is 400,000 EUR.
Please also bring the bill/confirmation of payment of the insurance. More info about the insurance - the website of the MOI: here.

The email explained:

"an original copy of the health insurance contract"
This is not always possible. What if you buy the insurance on line? How do the embassy deal with that?
If you buy the insurance on line, the contracts are "digitally signed" by the insurance companies and are accepted by the embassy.
It is usual to print off the pdf copies that the insurance company have sent you and hand over the printed copies when asked by the embassy.

"which covers the period between getting the visa and participating in the Czech public health insurance"
You need the insurance to start at least on the date of your visa collection.
For example: if you are going to Dresden to collect you visa on the 20th of the month, then you can start the insurance on the 20th.
It is estabished policy that the insurance starts at midnight of the start date of the insurance. So if you start insurance on the 19th the start date of the insurance will be on the morning of the 19th. If you start the insurance on the 20th the insurance will start at midnight on the morning of the 20th.

The phrase "participating in the Czech public health insurance" is for people who will be signing into the state system after visa collection. The Dresden embassy will want to see a minimum of two months Complex health insurance to cover the time between you collecting your visa and you signing into the state system.
